I am at my Mom’s for the weekend & we woke up this morning craving a naughty breakfast treat. She recently bought a doughnut pan & we decided it was high time we try it out. After browsing through different recipes, we came across this simple one from Vegan Yum Yum. The recipe is for “mini doughnuts,” but we had a regular doughnut pan & it worked out fine. After 12 minutes in the oven, we had 6 fluffy cinnamon-spiced beauties to quell our desire. For the glaze, we simply blended soy milk & powdered sugar. As we devoured them, we dreamed up all the different flavor combinations we could try - double chocolate, lemon, coconut, & beyond! Who knew making vegan doughnuts was such a snap?
